Postpartum Parfait anyone?

This is a yummy recipe from Trim Healthy Mama.

Can be used with cottage cheese instead of ricotta.

This would be a nourishing snack for a new mom!


Strawberry Ricotta Parfait! (S) This quick and easy recipe from page 378 of your original Trim Healthy Mama book looks and tastes like a fancy dessert but is easy enough for any summer day! The Ricotta Cheese makes a nice protein base for a great breakfast, snack or dessert.

1/2 cup Fresh Strawberries, sliced 1/2 cup Skim Ricotta Cheese 2 to 3 tsp Gentle Sweet or 1 tsp Super Sweet Blend 1/4 tsp Vanilla or Almond Extract Slivered Almonds

Stir up the ricotta cheese with sweetener & extract. In a glass or bowl, alternate layers of the berries, ricotta mixture & slivered almonds.

The almonds make this an S, but you can leave them out or only include about a teaspoon or so for garnish and then you have a Fuel Pull dish. Just be sure you are using the skim ricotta cheese.
